Crepe VPK & Mom’s Morning Out Lunches

When I was in high school, I went to France with my parents. While I appreciated it as much as any snotty-nosed punk high school girl who was away from her boyfriend would (aka not as much as I would now), it was an amazing trip. I saw priceless art that I may never have the opportunity to see again, I stood in the Hall of Mirrors in Versailles, I saw king’s castles, I did loads of shopping (I brought back clothes that wouldn’t even be in style in the States for over six months – sure, many of my classmates laughed at the styles then, but they appreciated it later), I went to a high fashion show, and I ate. Lots of good food, including many delicious crepes – some filled with ham, broccoli, and cheese, and some with Nutella and raspberries. All of them delicious, wrapped up in a cone shape, still steaming in the Paris air.

When I found a crepe recipe in my 100 Days of Real Food cookbook, it brought me back to that fab trip to Paris. While I had never made a crepe before, I thought it would be “similar” to pancakes. Boy, was I “wrong” (I feel like Joey on Friends, using his air quotes incorrectly). After many tries, I was able to make 3 decent crepes that would suffice for my boys’ school lunches (the recipe makes 16-18 thin crepes). Practice makes perfect, right?

For my Bigs, I packed two crepes, some maple syrup, and some raspberry jam for dipping. I also packed a mandarin orange, blueberries, a few cinnamon apple sticks from Trader Joe’s, and a yogurt squeeze.

My Smalls requested peanut butter for dipping, so I packed that and one crepe. I also packed blueberries (he likes those now), raisins, and a few cinnamon apple straws. He will have peanuts and applesauce for snack.

The Ghostess with the Mostess

My unfortunate run of cooking this week has been hit AND miss today. Dinner was a just okay. I made chicken. Nothing special. What is wrong with me?! If only I had the same passion about cooking as I do baking!

I gotta get back on track with cooking dinners that are both complete AND edible, so my family doesn’t starve.

I did make something really yummy earlier today, that I served with tonight’s chicken. I also was hoping to put it in my Bigs’ lunchbox tomorrow, but alas, he did not care for them.

Vegetable Macaroni and Cheese Muffins:

My Bigs can sniff out a green vegetable like a hound dog. These “muffins” had broccoli, carrots, and onions in them. A trifecta of deliciousness, if you ask me. I was really hoping Bigs would love them and want to enjoy one for lunch tomorrow. Oh well. My Smalls enjoyed them. He doesn’t love noodles, but he’s crazy about savory food…broccoli in particular. He ate about a pound of broccoli today. And enjoyed the noodles because of the broccoli. I even convinced him (no convincing needed, actually) to eat broccoli as his prize for going twosies in the potty. Funny kid.

Anywho, because Bigs did not like these, I had to come up with another lunch.

I made a turkey, cheddar, and mayo sandwich. I shaped it like a ghost and added candy eyes. I also packed seasoned corn, plum slices, a honey zucchini muffin, two TJ’s ginger cookies, and some dried blueberries.

I made the muffins on Monday. They are delicious – whole wheat, honey, zucchini. What’s not to love?

Another great recipe from 100 Days of Real Food. Although I think I didn’t grate my zucchini small enough, my Bigs doesn’t seem to mind these. Maybe because I call them “Army Men Muffins”. I never thought I’d be the parent to HIDE vegetables.

My Smalls has school tomorrow too (and his “school” pictures, so cute!!). I made him a special lunch:

I turned a PB&J into a pumpkin shape and used my Food Writers to add some details. I also packed banana chips, two ginger cookies, and some dried blueberries. I hope he knows what his sandwich is!

Raisin’ the Roof!

Happy Tuesday (I hope it is for you, anyways)! This Tuesday was a pretty happy one for me. My Bigs had a great day in school and worked on writing capital “B’s”. I went jogging with my Smalls and there was a breeze (it’s the small things). I made a delicious dinner (my dinner track record of late hasn’t been so great) and I’ll even be sharing one of the recipes soon. I also made a Cinnamon-Raisin Quick Bread (by Lisa Leake, 100 Days of Real Food). It was a happy Tuesday.

Here is my Biggy Bigs’ lunch for tomorrow:

I cut one slice of the quick bread and sandwiched it with cream cheese. I also packed one slice of ham, rolled up, and some pieces of cheese, seasoned corn, homemade fruit snacks, and some Sun Drops (colored, chocolate-covered sunflower seeds). I am betting my Bigs will love this lunch. I love the colors of it. So cheerful!

The bread was a breeze to make – it’s not named “quick” bread for nothing!

I love 100 Days of Real Food recipes. They are clean and mostly easy. A win-win!

The house smelled heavenly while this little loaf was baking. Cinnamon and raisins go so well together in taste AND in smell.

If you’ve got an hour, some whole wheat flour, honey, cinnamon and raisins (and a few other basic ingredients), TRY THIS.

There is no white sugar in it – only honey. It’s made with whole wheat. It’s hearty. It’s good hot, cold, or toasted. What’s not to love?
