Strawberry, Blueberry, and Beet Applesauce

I love making applesauce! I feel like such a queen when I do. It always comes out so beautifully and I can’t seem to mess it up. I usually make it during the Fall-time, and it perfumes the house with a warmth of cinnamon, and apples; tart and sweet. But, because it’s now Spring and I want to get more veg down my kids’ gullets, I came up with this recipe.

I happen to love beets. I always have. I was the weird kid (#weirdkidsrock) that would eat beets straight out of the can. And alfalfa sprouts with ranch as my after school snack. I meannnnn…  But beets are really quite good for you, earthy  and dirt-tasting as they are! They are great for heart and liver health and full of fiber.

Bonus: you let the crock pot do the dirty work (unless you consider coring and cutting apples dirty work. and then, I can’t help you. *I leave the skins on the apples for extra fiber.).

Once everything goes into the pot, the beets lend their beautiful, jewel-toned ruby-red color to the apples. Then, the entire thing becomes that same gorgeous color when blended together!

  1. After fruit is thoroughly washed, core and cut the apples, cut the beets into quarters, and hull the strawberries. Place them, along with the blueberries (you can add in the beet juice, if you'd like) in the Crock Pot. Add the water, lemon juice, honey, and salt. Turn on to high heat for 4 hours. Once the apples are tender, turn off the Crock Pot. Use a wooden spoon to mash to the desired consistency. You may also use a hand mixer. Enjoy hot or cold!

Hooo Goes There?

I’ll tell you hooo goes there – owl themed lunches! For tomorrow’s school lunches, I made owl shaped ham and cheese sandwiches. I added googly eyeballses, and used my food safe markers to add wing, beak, and claw talon details (do they have claws or talons? EDIT: they have talons, as per my non-extensive research determined). I also packed dried apricots, applesauce, mandarin oranges, Good Thins veggie blends crackers, and Trader Joe’s chocolate sunflower seed drops for dessert.

Homemade Lunchables Kindergarten School Lunch (again!)

I made a homemade Lunchable(s) for tomorrow’s school lunch. I packed plain graham crackers, sliced colby jack cheese, sliced and rolled ham, dried cranberries, pickles, homemade cinnamon applesauce, and a cut up Little Debbie Star Crunch. And just in case you’re wondering…yes, I eat a teeny portion of that Star Crunch each time I cut it.

First Day of Fall Kindergarten & 3’s School Lunches

Tomorrow is…wait for it…okay don’t…THE FIRST DAY OF FALL! For us, living in sunny and hot Florida, this means nothing more than not looking like a wackadoodle for putting out pumpkin decorations (I proudly fall into the wackadoodle category, as my fall decor has been out for weeks!). Sometimes, we Florida girls will also wear boots, quite unnecessarily (I also do this), order our weight in (sometimes skinny and alternative milk) PSLs (look it up if you don’t already know), and marvel at how crisp our mornings have been, in the mid 70’s. Ahhhh, Fall! Would I love to see some orange leaves? Yes. Would I love the weather to require boots or snuggly sweatshirts? Heck yes. But for now, I shall celebrate with pumpkin shaped sandwiches in my kids’ lunchboxes. I do what I can with what I have.

For my babes, I made a honey maple turkey, colby jack, and mayo sandwiches shaped like pumpkins. I used Food Writers to add a few details. I also packed cheddar sandwich crackers, peaches, grapes (for Bigs), broccoli (for Smalls), applesauce squeezey (for Bigs), an Apple Pie Oatmeal Cookie, and a few candy corn (or “candy pa-corn” as my Smalls calls it).

Apple Themed Kindergarten School Lunch

‘Tis the season for all things pumpkin…AND apple! I made a quick batch of homemade applesauce earlier this week. I peeled, cored, and sliced gala and golden delicious. I put them in a saucepan, with a little bit of lemon juice and a few cinnamon sticks, over medium high heat. I stirred them until they broke down. I added cinnamon, a little bit of pumpkin pie spice, and vanilla. When they over adequately tender, I blitzed them in the food processor. That’s it! It made my house smell so autumnal and homey! And my oldest loves it! So, with that and the Apple Pie Oatmeal Cookies I made last week (I froze the batch), I was inspired to make an apple themed lunch for my oldest.

I made an apple shaped sunbutter and apple jelly sandwich. I used Food Writers to add a little red color and I used some of the upper crust to look like a stem. I also packed colby jack cheese, snap pea crisps, homemade applesauce (with a little extra cinnamon on top), an apple cookie, and a squeezy yogurt. I decorated with two little apple cupcake picks.

I guess you could now call me an inCIDER on all things apple. 😀

Turtle Kindergarten & 3’s School Lunches

Did you know that a group of turtles is called a “bale”? And that turtles have their own water filtration system? It’s true. I read it on the Internet. For tomorrow’s lunches, I went with a turtle and green theme. Only my Bigs will be in school tomorrow, but I didn’t even think about that until after I’d already made Smalls’ lunch, as well.

I made turtle shaped sunbutter and strawberry jelly sandwiches. I used my Food Writers to add details. The boys ate the sandwich scraps as I made these lunches. I also packed cotton candy grapes, blueberries for Bigs, a cute little plum, snap pea crisps, and applesauce with turtle sprinkles.

Thursday Lunches – Gorillas and Happy Faces

My oldest son eats as much as a 900 pound gorilla. At any given time. This is a fact. He said today’s lunch just wasn’t enough food. Soooo….

Here’s his 900 pound gorilla lunch for tomorrow:

I made a gorilla shaped ham, cheese, and mayo on whole wheat bread. I also packed Trader Joe’s cinnamon apple puff stick things, goldfish crackers, a whole mandarin orange, green grapes, and raspberries.

Cross your gorilla paws (are they called paws, I need to know) that this is enough.

For my small little chimp:

I made a half peanut butter and jelly sandwich with a smiley face. His favorite color is blue and he loves when I draw smiley faces for some reason (because they are happy I’m guessing). He also loves when I draw “wacky guys”, you know, those air filled tall things that do that wacky little dance in front of hot tub stores? My Smalls both loves and is scared of them. We do the “wacky guy” dance at home. I digress. I also packed a chocolate chip cookie, carrots and hummus, and goldfish crackers. He’s got the apple sticks and applesauce for snack.

Lion VPK School Lunch

Tomorrow continues Zoo Week for my big kid, so here is his lion-themed lunch:

I made a lion-shaped ham, cheese, and mayo on whole wheat bread. I added just a few details with my Food Writers. Sadly, this lion could also be confused for a magical My Little Pony, due to my subpar decorating “skills”. I suppose that isn’t too sad. I loved MLP. Oh well. I also packed half a mandarin orange, some goldfish crackers, applesauce, green grapes, and raspberries.

Rawr.

Or neiiighhhh.

I’m not sure.

Over Your Head

The theme of this week has not been “lazy lunches”, although it might have appeared that way. It has, in fact, been transportation. I just have not been able to get my act together enough to do coordinating lunches, until now.

Bigs has a little prop plane (I think) shaped PB&J (sandwich scraps eaten as a snack this afternoon). I also packed a mandarin orange, pretzel sticks, green grapes, raspberries, and a cherry chocolate cookie.

For my Smalls:

I made another prop plane PB&J. I also packed pretzel sticks, dried apricots, raspberries, green grapes (without “bumps” [seeds], as he calls them – his little sensory self cannot take seeds of any sort, except in raspberries), and a cookie. For snack, he asked for Goldfish crackers. I also threw in an applesauce. He likes to dig in his lunchbox at snacktime.

Talk to me, Goose.

Homemade Lunchables

For tomorrow’s lunch, I made a Lunchables (my inner grammar nerd feels the need for “Lunchables” to be “Lunchable” in this case).

My kid has been asking for a Lunchable(s) for weeks now. I cut up colby jack cheese and ham (surrrrre, I could have cut the ham into squares, but I’d have ended up wasting some). I also packed Saltines, raisins, applesauce, a mandarin orange, and two red velvet Oreos.

Boo-ya.

I feel like I’d have said that back in the day when eating a Lunchable(s).
