Thankful Thursday

Tomorrow is Thursday and it’s my turn to work in my son’s co-op! I’m so excited! I love his teacher and his classmates and absolutely adore spending the whole day with him in school. I am so thankful for his school and the experiences it has given us both. I am MOST thankful for the love of Jesus that the staff, parents, and children have at his school. Jesus is in every conversation, every lesson. I’m so thankful that my sons’ hearts are filled with His love, even while at school.

Here is the lunch I packed for my Bigs:

I made a chicken, cheese, and mayo wrap and sliced it in half. I used Halloween cupcake picks to keep them together. I packed peanut butter filled pretzels, seasoned corn, a yogurt squeezy thing, and a teeny slice of apple gingerbread (my Mom made it and sent it over), cut into sticks. Yum. I used other Halloween trinkets and cupcake picks to decorate (a Frankenstein [I just read that the SCIENTIST was named Frankenstein, not the monster] and a plastic spider ring. Good times.

For my Smalls:

I made a PB&J wrap, cut in half. I also packed a few peanut butter filled pretzels, freeze dried mango, red grapes cut in half, and some of that apple gingerbread cake.

And for me:

I packed cinnamon raisin quinoa (recipe below), fresh steamed green beans (with S&P and red pepper flakes), a mini plum, some green grapes, and a honeycomb candy. I can’t wait for that one. I bet you that my Bigs will be poaching my dessert. 😉

I made the quinoa and green beans for dinner. The leftovers are perfect for lunch and taste delicious cold.

Cinnamon Raisin Quinoa

1 C quinoa

1/2 C slivered almonds

salt

1 1/2 C boiling water

1/2 C raisins

Toast the almonds until they are brown, add the quinoa and do the same. Add the rest of the ingredients and bring to a boil. Turn the heat to low and simmer for 20 minutes. Fluff.

The original recipe called for a cinnamon stick and cranberries. I only had raisins and cinnamon was easier for me to use. Either would be delicious!

And for a sweet ending (not for me, sadly), COOKIES! I made gluten free peanut butter cookies (with chocolate chips) for my gluten free friend’s birthday.

A Pretty Good Day (and lunch)

Today was a good day (do you Ice Cube’s song in your head now? I do…don’t make me rap it, because I will). My Bigs had school and I took my Smalls to a sweet pumpkin patch. He (mostly) listened to a story about pumpkins and proudly picked out his very own, teeny, little, adorable, curly-stemmed pumpkin. We ate burritos and tacos afterwards. Yes, it was a good day. My Bigs had a good day too! And all of us had a great nap after school. I even made a good dinner – gluten-free baked chicken cutlets, smashed garlic mini potatoes, and fruit salad.

Here’s to a good day tomorrow, too – we are on a roll.

Here is the lunch I packed for my Bigs:

My hands typed “Ham & Cheese” at the top of this picture, but they meant to type “Chicken & Cheese”. Oooooops! I would lose my head if it weren’t attached, my attention to detail is declining with age! I’m not even going to fix it (I deleted the original!!). Oh well. Ain’t nobody got time to worry about that. I packed a chicken, cheese, and mayo sandwich on whole wheat, some organic TJ’s peanut butter crackers, fruit salad (bananas, plums, pineapple, apple, grapes), carrots with ranch dressings for dipping, and a teeny homemade pumpkin chocolate chip brownie cut into pieces.

I hope he enjoys it!

The Great Pumpkin [Lunchbox]

I am one of those people who never finds it too early for pumpkin season to start. Some might call us annoying, others might call us one of their own. I love the start of this new holiday season, and I think September is an appropriate month to bring out everything pumpkin. Dontcha think?

For my Bigs’ lunch at school tomorrow, I brought it allll out.

I made a sliced chicken and cheddar sandwich (Applegate Naturals) with a little bit of mayonnaise. I used a pumpkin shaped cookie cutter to make the shape and used a sharp knife to make the face details. I used my Food Writers to add some color (orange and green) to the pumpkin. I packed carrot chips and ranch dip, seasoned corn (in a pumpkin shaped silicon mold), homemade cinnamon applesauce, and a green (lime) Tootsie Roll for dessert.

I think he’ll love it.

I made the applesauce earlier today. It was SO easy. I didn’t follow any recipe, and didn’t feel I even needed one (it was that easy). Here’s what I did:

Wash and peel (I ate the peels!) however many apples you have (I had about a 10 small ones). Core and slice them. Put them in your crockpot with a few tablespoons each of water and cinnamon. Set on high for a few hours. I stirred it and the apples were so broken down (a good thing), that they mashed all together. Yum. You can also keep the peels on, but my boys aren’t fond of that.

The house smelled like Fall. It was wonderful. And I love an easy recipe.
