Happy Halloween! School Lunches

Happy Halloween, Friends! For today’s lunches, I made Jack O’ Lantern sandwiches. On the inside is cream cheese and Trader Joe’s Pumpkin Pie Spice Cookie Butter. I used my food safe markers to add some details. And just like real Jack O’Lanterns, each one is different! HA! That bottom one looks like one that’s been sitting out for a week already, but hey, I don’t think my Smalls will mind too much! I also packed raisins, red and green grapes (sliced in half for Smalls, because he still likes to shove them into his mouth all at the same time), some Trader Joe’s Inner Peas, some veggie straws since I ran out of Inner Peas, an apple, a Kit Kat, and some black and orange chocolate covered sunflower seeds. Whew!

I hope today is a BOOtiful day for you, and that you don’t fly off the handle if you’re feeling witchy, and that you have fun trick or tweeting if you’re a bird, and that you enjoy your i-scream if you’re a ghoul.

Halloween Party Kid Food – BONE Appetit!

Are YOU having a Halloween party? Do you still need some food ideas? Boo, do I have some for you! Read below…if you dare…..mwahahahaha!

About a month ago, I received a call from a sweet friend of my boys (who also pretty much has me done in for, precious as she is!). She told me she was throwing a Halloween party and wanted me to be her “Chef”. How amazing is that!? She poured her heart into this party, planning every last detail – the decorations, the games, etc. She even had my husband, who is a DJ, provide the music. This was a party for the ages!

So, as the Chef, I pulled together some menu ideas with her wonderful Mama, and our planner approved them (Ā šŸ˜›Ā ). Each of the other invitees offered to make the items on our list.Ā Ā And here they are, in all their Halloweeny glory!

 

Horrors d’oeuvres Time:

To make this, you simply carve a pie pumpkin to look as if it’s barfed/vommied/puked…the nastier, the better! Put your dip (guacamole worked best for us because…guacamole) in front of it’s gaping barfy mouth.

These are Bugles! And how cute is this sign? A lot of thought was put into that sign.

This “Pumpkin Poo” went over well with the kids! Also, how can you go wrong with cheese balls? Every party needs cheese balls.

This sweet and fruity Jack O’Lantern was gobbled down in no time! It’s made with orange segments and grapes. You can use blueberries in place of the grapes or do a mixture of the two.

Dinner Time:

These Mummy Dogs are so easy to make, and leave quite a spooky impression! All you need is hot dogs and crescent rolls. Preheat the oven to 350F. Ā Dry hot dogs with paper towels. Cut or rip the crescent rolls into strips. Wrap the strips around the hot dogs in a random pattern. Place on a cookie sheet. Bake until the crescent rolls have become golden brown (as per the package).

For these cutie Jack O’Lanterns, you’ll need clear plastic cups, a Sharpie, macaroni and cheese, and some celery. Draw the faces on the cups before filling with the macaroni. Once you have added the macaroni, place a small piece of celery in, as the pumpkin stalk.

These Bat Nuggets are sure to scare! Bake your chicken nuggets, add tortilla chip wings, ketchup eyes, and make sure you eat them before they fly away! Bats fly quickly and erratically, you know.

Dessert Time:

Nothing will gross you out and make your kids laugh more than these graham cracker bandaids!! All that you’llĀ needĀ are graham crackers, icing, and red gel. **Yeesh!**

Our ghostess with the mostess put these donut monsters together, right down to the eyes and teeth! Super scary!

These were my contribution – Trick or Treat Brownies and Meringue “Ghosties”. For the brownies, you’ll need one box of brownie mix, a bunch of candy (I used Kit Kats, Reese’s Peanut Butter Cups, and M&M’s), and candy eyeballs. Prepare the brownie mix and pour into a 13×9 prepared pan. Chop up the candy (not the M&M’s) and sprinkle randomly. Bake as directed. I found that my candy sank a bit as the brownies baked, so I chopped up some more and squished it into the freshly baked brownies. Do the same with more M&M’s and the eyeballs. Let cool and cut into squares.

For the Meringue Ghosties, I used the following recipe.

I used a food-safe paintbrush and hand painted the eyes and mouths, using black gel coloring.

Ghost Themed School Lunch

I’m just aGHOST that I’m blogging this close together! For today’s lunch, I went with a cutie ghost theme for my big first grader. I made a ghost shaped peanut butter and mango jam sandwich. I added some eyes and a mouth with my food safe markers. I also packed Trader Joe’s pumpkin crackers, dried coconut and orange slices, real oranges, green grapes, ghost meringues (recipe forthcoming!), and black and orange chocolate covered sesame seeds.

Monster Sandwich Kindergarten & 3’s School Lunches

I love these little guys! These monster sandwiches came out great (in my humblest of opinions, of course). I made crustless sunbutter and apple butter sandwiches and cut them almost in half, but in a funky shape. I added googly eyes, of course. I stuck them on with extra apple butter. They look extra googly because of that. Sort of works on a monster. I made funky hair out of huge grapes (Smalls’ have been cut in half) on mini skewers. I also packed colby jack cheese (Bigs), carrot sticks (I’mĀ positive Bigs will fight me on this and they’ll come home uneaten, but hope springs eternal!), broccoli (Smalls), dried cranberries, and a Trader Joe’s mini pumpkin pie for dessert.

Today was much better, if you can’t already tell.

Mummy Sandwich Kindergarten School Lunch

Oh, you guys. The times, they’ve been rough. My little big guy is still in his sling for his broken clavicle. He’s got to stay in that for another three weeks, we were told by his doctor today. I got a stomach bug yesterday (or food poisoning, I’m not sure). I had a two day horribleĀ migraine. I’m still sort of dealing with that one. My truck got a SUPER flat tire (as in, I could hear the air whooshing out)…turns out it had a RAZOR BLADE IN IT. Thank you to the guys renovating the house across the street (also doing the roof, SO nice to hear that hammering with a migraine!). The car people also realigned my tires, but really didn’t at all, so we had to go back a second time. SIIIIIIIIGH. I’m so excited to leave those times behind me and face the week in front of me.

Despite all of that (sorry for complaining!), I wanted to make a super fun lunch for my one-armed brave bubba.

I made ham, cheese, and mayo kebabs and added googly eyes. They are now mummy kebabs. I also packed goldfish crackers, mandarin oranges, seasoned corn, and a favorite from my childhood – a Little Debbie Pumpkin Delight. I added a few Halloween decorations (a cupcake pick and a ring). I think he’ll love it. He thinks mummies are rad. Unless they’re scary. Then they’re scary, not rad.

Here’s hoping things take a turn for the better.

Halloween Muddy Puppy – a last minute Halloween dessert recipe

Do you call it “Muddy Buddy” or “Puppy Chow”? I grew up with both names for this dessert. I like them both. I can’t decide which one I want to call it, so for now, I call it “Muddy Puppy”. It seems to work out.

Do you need a quick last minute Halloween party recipe that is sure to please? You’ve come to the right place! This recipe can be made in under 20 minutes (add a few to that to the drying phase) and contains very simple ingredients. And it’s addicting. I’m not so sure that’s a good thing though.

Halloween Muddy Puppy

Serves: a ton

8 C Chex cereal

1 C semi-sweet chocolate chips

1/4 C butter

1/2 C peanut butter

1 1/2 C powdered sugar

Candy (I used candy corn, Kit Kats, and mini M&M’s)

*You can also add vanilla (I didn’t and it tastes fine without)

*This can be made gluten and dairy free with the base ingredients (GF Chex, DF butter) – just make sure your candies are, as well

Put the Chex in a large bowl. Melt the chocolate chips, butter, and peanut butter (microwave for 1 minute, stir, microwave in 30 second increments to ensure it’s completely melted). At this point, you could add vanilla. Pour over your Chex and stir gently. Place in a Ziploc bag and pour in powdered sugar. Shake shake shake! Spread onto a large pan, covered in wax or parchment paper. Dry and cool. Add your candy.

**Caveat: I was in a rush and shook the powdered sugar and Chex WITH my candy. It all tastes the same, but your mix would be more vibrant if you followed the above instructions, which I failed to do. Which is typical.

Happy (almost) Halloween 2014!

Tomorrow is Halloween. My boys can’t wait. I asked my Bigs what his favorite part about Halloween was going to be and he said that it was the dressing up, “alllll the caaaannnndyyyy”, and being with us. Bless. It’s going to be a fun night.

Here is his school lunch for tomorrow:

I made a PB&J ghost and used my black Food Writer and candy eyeballs for decoration. I also packed a few veggie chips, some seasoned corn, two pitted dates (or cockroaches, as my kids call them – perfect for Halloween!), cantaloupe and pineapple, a blueberry yogurt squeezy thing, and a few Halloween candies for dessert (a mini Kit Kat, orange and black chocolate covered sunflower seeds, candy corn). I used cupcake picks and plastic spiders to decorate it all.

And tonight, for dinner, I actually cooked something yummy. Everyone liked it. It’s a recipe I used to make all the time. It’s so easy. And cheesy. And trashy. And naughty. And a little embarrassing.

I could have eaten the whole pot (almost did, waiting on everyone to get to the dinner table!).

Cheeseburger Pasta:

Serves 1 (HAHA just kidding [sort of])

Pasta of any kind (we used GF)

Ground beef

Ketchup

Mustard

Cheddar Cheese

Pickles

Make. Mix. Eat out of pot. By yourself. In the kitchen.

I told you it was a bit embarrassing.

On a classier note…

I also made a treat for my boys’ teachers for tomorrow. It’s more Christmassy than Halloweeny, but I went with it. I found a recipe for copycat Jason’s Deli gingerbread muffins, after a recent dinner there with my kids. I am ob-sessed with those muffins (and all things gingerbread). These came out just like those! For the teachers, I baked loaves.

It’s moist, tender, but dense, fragrant, spicy, and sweet. I love it. I’ll be making it a thousand more times.

Spooky Teeth Lunch

For Bigs’ lunch today, I packed [yes, another] Mummy Hot Dog, seasoned corn, popcorn, cantaloupe and pineapple, an organic yogurt squeezy thing, and some spooky teeth for dessert. These were so easy and will (I hope) make a cute impression. I cut apples to look like lips (they will need some kind of citrus juice on them so they don’t brown), spread peanut butter, and place marshmallow “teeth” on them. Easy peasy. These would be a cute Halloween snack, too!

For my Smalls, I packed a PB&J, pretzels, dried fruit, and a banana.

The boys are ready for Halloween tomorrow and cannot wait to go trick or treating.

Mummy Dog Days of Fall

My Bigs loved his Mummy Dog lunch today so much that he asked for another one. And, since I made 8 of them (as there were 8 crescent rolls in the canister), I said, “Sure!”. I doubt this is the last day I’ll be making a Mummy Dog lunch, so get ready.

I packed said Mummy Dog, some red grapes, good quality cheese, cut into candy corn shapes, some raisins, a little packet of ketchup (not labeled blood!) for the Mummy, some cantaloupe, and a teeny slice of my Pumpkin Cake with chocolate bark for his dessert.

Mummies and Pumpkins and Cakes, oh my!

What a fun weekend we had! I participated in my first bake-off. I am SO not competitive, by nature. It gives me anxiety, like, for real. But I LIVE for baking (and you know, my kids, husband, Jesus too). And it was a friendly competition, hosted by my wonderful friend, judged by two chefs that she knew. And I knew we’d ALL be winners, you know, eating all of the desserts. I wanted to do something seasonal, so I decided on a pumpkin cake. To me, that would be perfectly acceptable on its own, because…#pumpkinallthethings, but this was a competition.

The cake itself was so pretty. The recipe called for an entire can of pumpkin, which I hadn’t seen before. I knew it would be rich with fall flavor and moist.

It was heavenly. While that was baking, I went to work onĀ  next project – the cake’s decoration.

Halloween Candy Bark!

I meannnnnn, forrealz! This is a thing! I ran across the recipe in my research and fell in love with it. It’s so festive! I could have used any candy, I suppose, but the blog used these and I loved how it looked like the inside of a trick or treat bag, but with eyes.

Since my pumpkin cake recipe called for 3 8-inch rounds and I only had two, I made three smaller cakes to go with the 2-layered big one.

I decorated the big one with the Halloween bark, cut into shards, and I used candy corn, more shards, and eyeballs to decorate the smaller ones. Not the cleanest work I’ve ever done, but it worked out because my creation won “Most Innovative”! I was so happy. It really was a delicious cake (and the bark was SO good).

This cake would be an incredible addition to a Thanksgiving table. It’s maple cinnamon cream cheese frosting takes it to a new level.

Since my long-suffering husband is both and dairy and gluten free, I couldn’t let him go to the bake-off with nothing to eat. I made him a Chocolate Pumpkin Sheet Cake.

I could tell by the batter that it was going to come out delicious.

And I was right. It was HUGE too, enough to feed a gluten and dairy free army. It puffed right up like a “real” cake! This was my first successful attempt and GF DF from-scratch baking (cakes). I left off the frosting (since it was filled with dairy).

I’ll be using this recipe again and again. It called for over 1 can of pumpkin, but I just used one and it turned out beautifully.

All of the desserts at the bake-off were delicious. That was a fun night. I’ll have to up my game for next year’s competition.
