Thursday Lunches

In continuing with Pond Week, I made another turtle lunch for my Bigs. I like how this one came out better than the other.

This little guy has a bit more personality. It’s a PB&J. I also packed honey wheat pretzels, assorted raisins, one date, strawberries, an organic yogurt squeeze, and a homemade dark red velvet cookie. It was big so I cut it in half. I also stuck a few turtle sprinkles on it. Because, sprinkles.

For my Smalls:

He requested pancakes this time, so I made three little PB sandwiches. Under one of those is a red velvet cookie. I also packed a few purple carrots, honey wheat pretzels, grapes, a few raisins, and one date.

And since I’ll be Co-op parent tomorrow, I made a lunch for me too:

I packed purple carrot slices, beet hummus, plain hummus, raisins, strawberries, nuts, dates, and some plain Greek yogurt, mixed with a little bit of maple sizzurp.

Candy Crush VPK School Lunch

It’s almost Valentine’s Day! Also known to many as Consumerist-Oriented-Shallow-Mass-Produced-Day. Either one will do. But I DO admit, it’s a fun week for kids. And I also do love chocolates. And other Valentine’s desserts. And pink and red together.

There’s a fine line, you know.

Here’s my Bigs’ first Valentine’s Week lunch (or “wunch”, as my Smalls says):

I made a PB&J square, on which I made a scalloped heart shape, and filled it with a few candy crush-lookin’ pink candies (which will compete with the Oreos as his favorite part of lunch). I also packed red grapes, baby pretzel nuggets, raisins, a mandarin orange, and two red velvet Oreos (you’re welcome, son). I used two Valentiney rings as decoration (light pink shimmery heart and a glittery hot pink kiss lip thing).

Boom.

Lazy Lunch Friday

I had every intention of making a cute lunch for tomorrow, but I have to admit, I am pooped. I worked as a Co-op Parent in my son’s class today. If you are a teacher, I want to thank you. You work SO hard and love on our children SO much and I am so grateful. I don’t know how you do it, day in and day out, and then go home to take care of your own families. So…THANK YOU.

With that, here’s Bigs’ lazy lunch for tomorrow (which I know he’ll enjoy and not find lazy at all…but I know the truth):

I packed two slices of pizza, a mandarin orange, some pumpernickel pretzel sticks, blueberries, grapes, raisins, and a few mini peanut butter cups.

The Sunshine State (Lunches)

When you think of Florida, what comes to mind? Songs, like “Way down upon the Suwanee River”, “Welcome to Miami”, or “Margaritaville”? Do you think of all the dumb criminals that keep surfacing on almost every news station country-wide? Or about our balmy beaches? We have ALL of those things. And tomorrow, my Bigs gets to learn about them, in his study of our great state. Well, maybe not the criminals. We’ll save that for a rainy day. Excitingly enough, I get to be Co-op Parent in his class.

Here is my lunch for tomorrow:

I packed blueberries, strawberries, a clementine, a hard boiled egg (on which I used my egg shaping kit to make it look like a bunny…because bunny eggs), S&P for the egg, snap peas, assorted raisins, Trader Joe’s mini peanut butter cups, and a few  TJ’s “Inner Beans” (which sounds horrific, but they are awesome).

For my Bigs:

I confidently decided that I could not free-hand cut the shape of Florida on bread and went with a tropical fish PB&J instead. I drew details with my Food Writers. I also packed pumpernickel pretzel sticks, strawberries, blueberries, assorted raisins, a clementine (you can’t pack a FL themed lunch without citrus), TJ’s yogurt star cookies, and an organic yogurt squeezy thing. I added a surfboard, a few flamingo (my spirit animal) picks, and a palm tree for decoration.

And for my little Smalls:

Going based on lunches alone, you might think I love my oldest son more than my youngest. Smalls’ lunches always look a little crappy. The truth is, this kid is so wishy-washy with food, I can’t even keep up. Tomorrow’s sad looking lunch consists of half a PB&J (which he tells me he only likes when he’s at school and won’t eat at home right now), a few carrots, pumpernickel pretzel sticks, assorted raisins, yogurt star cookies, and an organic yogurt squeezy thing. I also packed him a banana for snack.

If you need me, I’ll be looking for my large shaker of salt.

USA VPK School Lunch

I am incredibly patriotic. I love my country. I love other countries as well. I think that there is much to be learned from all of them, and that it’s incredibly important to learn from them. And I happen to love learning about them and their cultures. I’ve traveled a lot outside of the States and loved every minute of it. But this isn’t about that. This is about my country. I remember being in kindergarten during the Gulf War and learning the words to my favorite “USA” song – “I’m proud to be an American”. I remember singing it with pride and getting goosebumps, even back then, like I still do. This week in school, my Bigs will be learning about Country, State, and Town. I am very excited for him to come home knowing a bit more American history (for the purposes of tomorrow’s lunch).

I made a PB&J star and added detailing (my vultures boys ate the scraps). I also packed honey wheat pretzel sticks, a mixture of jumbo raisins, white yogurt raisins, and dried cranberries, blueberries, strawberries, and Trader Joe’s yogurt star cookies (I used only the white color for this lunch). I used USA-themed cupcake picks and rings for decoration.

Because, ‘Murica.

Community Helper Themed Lunches – Part I

This week began the Community Helpers study for my Bigs. During the next few weeks, the students will take a deeper look into the occupations that do great and helpful things in our community – doctors and nurses, dentists, police, fire, mail and pizza delivery (LOVE that pizza delivery falls into “community helper” status #ourschoolforthewin), etc.

First up this week – Dentist!

I made a peanut butter and jelly tooth. Yes, that’s right. A tooth. While I realize my free-hand cutting skillz require some work and leave quite a bit to be desired, I’m hopeful that my Bigs’ precious and sharp teacher was able to decipher what this thing was, when he inevitably would ask. I drew a toothbrush with toothpaste on it out of an index card, just for fun. I also packed raisins, Trader Joe’s honey wheat pretzels, half a mandarin orange, and apple smiles for dessert. For the apple smiles, I cut apple slices (used some mandarin orange juice on them to prevent browning), pat them dry, added peanut butter to the insides, and marshmallows for teeth. I think he loved it. I’ve done it before and it’s been a raging success. I also used my favorite lunchbox accoutrement – my toothpicks tooth picks. So fun!

This is where you’ll find further evidence of my crapola drawing skillz. In hindsight, I maybe should have written, “ER” or something more legible. But hey, Bigs can’t read all that well, so for once, that’s in my favor. Here you have yet another PB&J, but this time, it’s shaped as a doctor’s office (squint, then you’ll see). I’ve also packed honey wheat pretzels, raisins, strawberries, blueberries, and a Campfire Cookie.

My Smalls will also be in school today. Here is his little lunch:

Sweet Week

I was a Baking Fool this past weekend (it’s an official title, of sorts). I needed some new lunchbox treats. That’s always a fun time for me, finding something new to bake. I chose two recipes that I’d had tucked away for some time – Fairy Bites (tiny, little, sprinkle-y shortbread squares) and Campfire Cookies (all the yummy components of s’mores).

I’ve had these on my radar for a while and I was happy to finally be able to make them. They were so simple and easy to make and came out so cute.

Lightly almond and super buttery, these cookies are sure to please almost everyone (as long as “everyone” likes lightly almond and super buttery and cookies, and if you don’t, I’m not sure I want to know you)!

They are so adorably tiny, which makes them perfect for little hands. Or big hands, like mine. Either one.

But, I am still very happy with the way they came out.  These are great lunchbox treats and would be so precious at a little tea party (which my boys would straight up annihilate, so I’ll be sticking with serving these in lunchboxes for them and eating directly from the cookie jar for me).

I had also been wanting to make these Campfire Cookies for a long time. I LOVE s’mores. We have a life-long love affair, me and s’mores. And when the opportunity arises to eat them deconstructed or reconstructed, I’m in.

These hearty cookies are made with both flour and graham cracker crumbs.

They are chock full of Hershey’s milk chocolate and mini marshmallows.

Kebab VPK School Lunch

It’s kebabs for lunch for my buddy tomorrow!

I love giving him kebabs. It’s a great way to cut some carbs and it’s a fun way to serve lunch. I found mini skewers at my Publix. I used Applegate Naturals ham and cheese on the skewers. I also packed Trader Joe’s honey wheat pretzels, a whole mandarin orange, TJ’s assorted jumbo raisins, an applesauce cup, and an oatmeal cream pie, because #littledebbieforlife.

Snowflake VPK School Lunch

Where has “Winter” been this year? So far, where I live in the South, we’ve not had a very consistent season. It was in the 40’s last week and in the 80’s this week. No wonder my allergies are going bananas. Even though it feels like Summer right now, I still thought it would be fun to make a wintry lunch for my bud. And who knows, maybe it will beckon the rightful weather of this Winter. Fingers crossed. PS I know I might be the only one who actually wants Winter weather. I just wanna wear cute boots. Sue me.

I made a ham, cheese, and mayo sandwich (I use Applegate Naturals for both meat and cheese) and used my snowflake cutter and Food Writers to add details. I put the other half of the sandwich (with the inverted snowflake) in a container for my little guy to eat for lunch tomorrow. I also packed Trader Joe’s honey wheat pretzels, raisins, mandarin orange, little red grapes, and a teeny, cute Costco cinnamon bun that my friend hooked me up with (Thanks S!!).

Thursday Lunches

I used to love Lunchables. I am not sure if it was the compartmentalized container (for which I am a shoe-in), or the make-it-yourself situation. Either way, they were so fun for me. Unfortunately, they aren’t too healthy for you, which is why I like to make a homemade version for my buddy. Sure, it would be healthier if I made the crackers from scratch, but I can only do so much, ya feel? So, for today’s lunch for my Bigs, I made a Lunchable. He told me that he loved it and finished every bite.

I packed a few Ritz crackers, some honey maple ham (rolled up and cut), colby jack cheese, raisins, yogurt covered raisins, some seasoned corn, a mandarin orange, and a chocolate chip cookie.

And for my Smalls:

I packed a PB&J, assorted raisins, peanuts, an apple, and a chocolate chip cookie. I think there may be some dried fruit in there too, but I can’t remember (even though it was less than 12 hours ago that I packed it #Mommybrain).

His teacher told me he was very excited about his cookie. I can relate.

I love when lunchboxes come home [mostly] empty.
