Christmas Wreath Themed School Lunches

For tomorrow’s lunches for my boys, I went with a Christmas wreath theme. In many churches, the Christmas wreath, circling five candles, is used as a way to celebrate the Advent season, which counts down the four Sundays in December leading up to Christmas (which is the symbolized by the fifth candle). This season is so important to many families as we gather together to celebrate the birth of Jesus Christ and to rejoice in His glory! I know my boys might just see a wreath (with red hots!)…at least I HOPE they can see that it’s a wreath HA!…but, it was fun for me to connect it to the precious and everlasting love of Jesus.

Back to those red hots…

I used food safe spray and markers to add color, and red hots as holly berries on the wreath. There’s PB&J inside. HA! I also packed Triscuits, yogurt raisins, mandarin orange (Bigs), red grapes, and a slice of spice cake with some fun sprinkles for dessert.

Happy Friday! (And some turkey themed lunches)

Well, you’ve almost made it to Friday! Yippee! That’s always cause for celebration in our house. For tomorrow’s lunches for my little turkeys, I went with a turkey theme. This just might be my altogether favorite themed lunch from over the years. I’ve probably done this one over a dozen times and it never gets old to me. I think that little turkey is so darn cute! I made a turkey shaped PB sandwich. Ain’t nobody (re: me) got time for jelly today. I used my food safe markers to add some details. I also packed some crackers, a mandarin orange (Smalls), fresh berries (Bigs), red grapes, half a cheese stick, and a pumpkin brownie with a candy corn for dessert.

Hope your Friday isn’t too fowl! HAHAHHAHA

Pumpkin Themed Lunches

Happy Friday! I thought I’d live on the edge and add in a quick blog post. So, here I am againnnnnnnn.

For my boys’ lunches today, I made a pumpkin shaped ham and cheese sandwich. I used food-safe markers to add some pumpkin-y details. I also packed some Trader Joe’s pumpkin crackers, yogurt covered raisins, green grapes, and a little TJ’s pumpkin pie.

Homemade Lunchables 1st Grade Lunch

Here I am! I’m still here, I promise! I am slowly getting back on track (#famouslastwords #dontquoteme) and hope to pack normal, blog-worthy lunches for my deserving boys. For my NOW GREAT BIG FIRST GRADE SON (when did this happen, I only blinked), I went with an updated homemade Lunchables. One of his best friends loves salami so much, and we always joke about how much she loves her cured meat. Well, it influenced my Bigs and he asked for salami this time. I also added cheddar and crackers, dried fruit (coconut chips, apricot, date, and cranberries), midnight black grapes, and two homemade chocolate chip cookies.

Colorful Hot Dog Kindergarten School Lunch

Well, I’m sorry to disappoint you…the hot dog is, in fact, not so colorful. But I thought the lunch was enough to put that in the title. This should be funny to look back upon in five years! 🙂 For tomorrow’s lunch (for my almost six year old [today is the two week countdown!]), I packed a very standard, very un-colorful hot dog, a mandarin orange, green grapes, Cheez-Its, and two Rainbow Chips Deluxe. It’s all a bit processed around here, I’m not even going to argue you on that one. I used a clown cupcake pick to add such much needed color (can you sense my level of facetiousness…it’s a level I on which I operate often) and I called it a day!

You may have noticed (or not, and that’s okay) that I haven’t touched my blog in well over a month. It’s been a busy, busy time – busy with life, busy with migraines, busy with anxiety and depression. I am hoping to put words to all of my feelings on this. I am hoping that someone, somewhere, can empathize with it all, and if not, to at least relate on a level of of simple human-ness.

I’m just thankful for all of you special readers out there, that read my silly blog about sandwiches and basic hot dogs and the occasional commentary on life. I’m grateful for you.

Ornament Themed Kindergarten School Lunch

I only have one more special school lunch to make for this year, after today. I don’t even know where the time has gone!

For tomorrow’s lunch, I made an ornament shaped sunbutter and apple butter sandwich. I used lots of colors to make it festive. I also packed pita chips, red grapes, colby jack cheese, a mandarin orange, and two little peppermint meringues that I made yesterday.

Happy Thanksgiving Kindergarten & 3’s School Lunches

Well, here it is – my last Thanksgiving themed lunches for this year.

I made turkey shaped sunbutter and apple butter sandwiches [again]. I added feathers, gobblers, beaks, eyes, and turkey toes. Gobble. I also packed yogurt covered raisins, honey mustard pretzels, corn, raspberries (Bigs), red grapes (Smalls), and Linzer cookies.

School’s out forrrrrr Thanksgiving!!!

Perfect Sweet Potato Casserole (and another squirrel themed lunch)

It is THAT time of year again! I adore Thanksgiving. It’s my favorite holiday. Not just for the food, although that’s a huge part of it. I love the tradition, the memories I have of Thanksgivings past, the new memories made with family, the way people become so introspective about thankfulness. I love the traditional food that I make each year, and the new recipes I come up with. I love the crafts. I love every part of it. It makes me happy.

I always seem to make mini Thanksgiving meals in the weeks prior to the Big Day, in hungry anticipation. Last week, I made a turkey and cranberry meatloaf which I paired with my traditional macaroni and cheese casserole, green bean casserole, and sweet potato casserole (#casseroleallthethings). This week, I paired a new sweet potato casserole with a honey and dijon mustard glazed ham. And this SPC was SO dang good, that I just had to share the recipe with you. It also happens to be dairy and gluten free, which for my family, is a bonus!

It’s creamy on the inside, studded with little jewels of dried fruit, and topped with two kinds of marshmallow, which have been toasted just the perfect amount.

**Caveat** This recipe has raisins in it. I know for a fact that many people do not like raisins. I don’t care for them in cookies. They ruin cookies for me. But in this? They added a chewy, lovely texture.

Perfect Sweet Potato Casserole

Recipe serves 2 adults and 2 kids, with leftovers

3 medium to large sweet potatoes, peeled and chopped

2 T melted coconut oil

splash of coconut milk

1 egg, lightly beaten

3/4 C dried cranberries

2/3 C golden raisins

1/2 small jar marshmallow fluff

1/2 bag of mini marshmallows

Boil the peeled and chopped sweet potatoes until they are tender. Using a hand mixer, blend together the next three ingredients, until creamy and smooth. Fold in the dried fruit. Pour into a greased pan (I used a 9×9) and bake in a 350F oven for about 25 minutes. Melt the marshmallow fluff in the microwave. Pull the casserole out and spread the fluff over the top. Sprinkle the mini marshmallows over that and place back in the oven, with the broiler on high. Make sure not to burn the marshmallows, but see that they get nice and brown!

Also. I made yet another squirrel themed lunch. This is my last week of fall and Thanksgiving themed lunches, so I am doing repeats allll day.

I made squirrel shaped sunbutter and grape jelly sandwiches. I cut acorn shapes out of fruit leather for the little tree rats to snack on. I also packed goldfish crackers, dried cranberries, more dried fruit, colby jack cheese (Bigs), a mandarin orange (Bigs), green grapes (Smalls), and a Linzer cookie for each.

Squirrel Themed Kindergarten & 3’s School Lunches

HAPPY FRIDAY! I am so glad it’s Friday. Forrealz. I made squirrel shaped apple butter sandwiches for my boys. I also packed dried cranberries (Bigs), corn, cheese (two different kinds for two different tastes), mandarin orange (Bigs), grapes, and a cranberry cookie (Smalls).
