Perfect Sweet Potato Casserole (and another squirrel themed lunch)

It is THAT time of year again! I adore Thanksgiving. It’s my favorite holiday. Not just for the food, although that’s a huge part of it. I love the tradition, the memories I have of Thanksgivings past, the new memories made with family, the way people become so introspective about thankfulness. I love the traditional food that I make each year, and the new recipes I come up with. I love the crafts. I love every part of it. It makes me happy.

I always seem to make mini Thanksgiving meals in the weeks prior to the Big Day, in hungry anticipation. Last week, I made a turkey and cranberry meatloaf which I paired with my traditional macaroni and cheese casserole, green bean casserole, and sweet potato casserole (#casseroleallthethings). This week, I paired a new sweet potato casserole with a honey and dijon mustard glazed ham. And this SPC was SO dang good, that I just had to share the recipe with you. It also happens to be dairy and gluten free, which for my family, is a bonus!

It’s creamy on the inside, studded with little jewels of dried fruit, and topped with two kinds of marshmallow, which have been toasted just the perfect amount.

**Caveat** This recipe has raisins in it. I know for a fact that many people do not like raisins. I don’t care for them in cookies. They ruin cookies for me. But in this? They added a chewy, lovely texture.

Perfect Sweet Potato Casserole

Recipe serves 2 adults and 2 kids, with leftovers

3 medium to large sweet potatoes, peeled and chopped

2 T melted coconut oil

splash of coconut milk

1 egg, lightly beaten

3/4 C dried cranberries

2/3 C golden raisins

1/2 small jar marshmallow fluff

1/2 bag of mini marshmallows

Boil the peeled and chopped sweet potatoes until they are tender. Using a hand mixer, blend together the next three ingredients, until creamy and smooth. Fold in the dried fruit. Pour into a greased pan (I used a 9×9) and bake in a 350F oven for about 25 minutes. Melt the marshmallow fluff in the microwave. Pull the casserole out and spread the fluff over the top. Sprinkle the mini marshmallows over that and place back in the oven, with the broiler on high. Make sure not to burn the marshmallows, but see that they get nice and brown!

Also. I made yet another squirrel themed lunch. This is my last week of fall and Thanksgiving themed lunches, so I am doing repeats allll day.

I made squirrel shaped sunbutter and grape jelly sandwiches. I cut acorn shapes out of fruit leather for the little tree rats to snack on. I also packed goldfish crackers, dried cranberries, more dried fruit, colby jack cheese (Bigs), a mandarin orange (Bigs), green grapes (Smalls), and a Linzer cookie for each.

It’s the end of the week as we know it (and I feel fiiiine)

It’s in your head now. Right? You’re welcome. R.E.M. rocks! Do people say “rocks” anymore? Do young people say “rocks” anymore? I wouldn’t know.

So, the end of the week is here (yay). It’s been such a crazy week. I haven’t even had a second. But now I do. So, I’m taking my second to show you food.

Bigs’ Wednesday lunch was a breakfast theme! I packed a pancake “sandwich”, made with two gluten and dairy free pancakes, peanut butter, and honey. I also packed one slice of turkey bacon, cut up, some assorted raisins (Trader Joe’s big bag of assorted raisins ROCKS [#cantstopwontstop #imold]), a colby jack cheese slice, an orange, and granola (Trader Joe’s again).

Bigs’ Thursday lunch was another turkey lunch (this time with ham and cheese!). I used my Food Writers and a turkey cookie cutter to make him so cute (if I can say so myself). His hay bale is crusts. I also packed grapes and applesauce. Bigs told me he was “staaaaarving” after eating this, so I made sure to pack more tonight for Friday’s lunch.

So. For Bigs’ lunch tomorrow (Friday), I was sure to pack more food. I went with a Fallish squirrel theme. I made a ham and cheese sandwich, shaped like a squirrel. I used my Food Writers for his eye detail and cut out a little piece of fruit leather in the shape of an acorn. I also packed pretzels, seasoned corn, grapes and pineapple, an organic yogurt squeezy thing, and Trader Joe’s ginger cookies for dessert.

He’s going to go nuts! Get it? I love a pun.

And for my Smalls’ lunch today, I packed a Mickey Mouse(ish) lunch. And to prove it, here’s a blurry picture:

Three baby Mickey Mouse shaped PB&J’s, some organic Trader Joe’s PB crackers, grapes, and TJ’s school house letter cookies. He ate all the grapes this time!

I also made Thanksgiving this week! I don’t think you can have it enough. I made a meal for a friend and doubled so my family could enjoy it too!

I can’t wait for the REAL Thanksgiving! It’s going to be the bomb! (Do they say “bomb” anymore? Or is that done-zo?) For us, I made gluten free Turkey and Sage Meatballs.

Turkey and Sage Meatballs

1 lb (ish) ground turkey

1/2 C gluten free breadcrumbs

1 egg

S&P

1 1/2 t of ground sage or poultry seasoning

Mix together, roll into balls, place on greased pan, bake for 30 – 45 minutes (depending on size of meatballs) at 350F.

I covered our meatballs with a homemade cranberry orange sauce.

Cranberry Orange Sauce

1 C fresh or frozen cranberries

1/4 C frozen orange concentrate

1/3 C water

1 T sugar

1 packet of plain (unflavored) gelatin

Place all ingredients, except for gelatin, in saucepan. Bring to a boil. Whisk in the gelatin and simmer until thick.

Roasted turkey breast for my friend. I seasoned it with S&P, garlic powder, onion powder, poultry seasoning, and olive oil. I roasted it according to directions.

I made green bean casserole, all of which I could have eaten by myself. I love it.

I made sweet potato casserole. I didn’t have marshmallows, but I DID have marshmallow fluff. And being the resourceful woman that I am, I swirled that ooey gooey fluffy goodness around in the sweet potatoes and it came out just fine.

I made my first ever pumpkin pie (weird that it’s my first!). I used a basic recipe. And I overdid it. But I love my friend, she didn’t even care.

And lastly, I made an old fashioned Cranberry Fluff Salad. I took a picture, but it looked awful. Like bad awful. But it was good. SO good. I am on the molded and gelatin based salad train. Doesn’t that sound like a gross train to be on? It’s not. It’s amazing. If you like that sort of stuff. Which I do. I DID have to change the recipe, due to my lack of marshmallows. Again, I used the fluff. I thought it might work since that IS one of the names in the recipe. And it DID work, maybe not as successfully as marshmallows would have, but it was still really good!

‘Twas the Night Before Christmas…

Twas the night before Christmas

It’s here, it’s finally here! The night to start or finish wrapping gifts, the night to put together all the toys and bikes, the night to play Santa, the night to set out milk and cookies for yourself to enjoy later. It’s here!

I just don’t know if we’ll have enough time!

We’ll OBVIOUSLY be turning on A Christmas Story just as soon as it starts tonight. It’s a family tradition that I grew up with that I am imposing upon my own family. Best movie ever.

And so is Elf. But they haven’t played it on the channels we have, yet.

We really do have so much to do today. I’ll be making some casseroles for tomorrow’s brunch (Cracker Barrel inspired cheesy hash brown, and a white chocolate and cranberry bread pudding – all of which you’ll see here soon!). We’ll be cleaning the house for guests, we’ll be doing special traditions with our sons and we’ll be going to Christmas service. It’s going to be lovely.

Our elf Duncan was here again. And today is his last day with us.

Yesterday, he set out a birthday party for Jesus!

Also, I made a turkey dinner last night.

I got this HUGE (almost 10 pounds) turkey from Publix for $7.80. I couldn’t believe it. It’s actually the first whole turkey I’ve made. I think it came out great. Was it a leeeetle bit dry? Sure. Whatevs. It’s my first. The prep was easy (olive oil, Kosher salt and poultry seasoning), but I don’t care how strong your stomach is, pulling out a half-thawed, leaking bag of innards will make you queasy. Well, me, anyways. Blech. And that neck. I am southern, but that neck. *Shudder!* I cooked it (the turkey, not the neck – dat nasty went right in the bin, although I am sure someone somewhere has a great recipe for it, lolz) according to directions and the whole time it was cooking, I was drooling. Whenever there is a cooked turkey around, I am like The Old Man Parker (the dad on A Christmas Story). I cannot resist sneaking (which…as an adult who made the turkey, do I really have to sneak bites? I guess I sort of do, with kids around, if I want peace while eating.) crispy skin or breast meat pieces. Oh just yum! I made a quick gravy from the drippings and corn starch and pepper. Gravy is one of those foods that, and my parents will back me up on this, I got really sick on after eating too much in one sitting as a child and came back for more AFTER…um…disposing of it. Know what I mean? I love gravy. I’m gross.

I served the turkey with steamed fresh green beans and sweet potato casserole (basically the same meal as the other night, but subbing turkey for ham). It was SO good. And yeah, I’ve served my family sweet potato casserole with marshmallows three weeks in a row.

I tried to show my older son how to make a wish using the wishbone, but for some reason, it didn’t work. Neither of us got our wish. That dang thing was as slippery as an eel. We sure did try to break it. He even tried to break it with all his three year old might! It wouldn’t budge. Whatever. He still thought it was cool.
