Gingerbread Boy Kindergarten & 3’s School Lunches

Gingerbread is my absolute FAVORITE. I could eat it errday. Forrealz.

In honor of that, here’s my boys’ lunches for tomorrow:

I made gingerbread boy shaped apple butter sandwiches. I added details with Food Writers and chocolate covered sunflower seeds (which I also threw in the lunchbox, as well). I also packed snap pea crisps, red grapes, carrots (Smalls), corn (Bigs), yogurt with gingerbread boy sprinkles, and Trader Joe’s gingerbread boy cookies.

Gingerbread 4 life.

Elephant VPK School Lunch

Tomorrow starts “Zoo Week” in my Bigs’ class. To start it off, I went with the grand old elephant.

I made a PB&J elephant, and he is sitting upon his crusty knoll. I threw in some oyster crackers, but they are hiding. I also packed a mandarin orange and some vanilla Greek yogurt, with elephant sprinkles.

Tulip VPK School Lunch

I’m don’t know about where you are, but where I am, Spring has sprung. Actually, to be honest, it feels like Summer. It’s way too soon for that mess.

To keep it Spring-y around here, I made a sweet tulip lunch for my Bigs:

I made a tulip-shaped cream cheese and jam sandwich. I also packed assorted raisins, honey wheat pretzels, a mandarin orange with a blueberry, Greek yogurt with flower sprinkles, and three little yogurt star cookies from TJ’s.

Bee Mine VPK School Lunch

Here is tomorrow’s lunch for my Bigs:

I made three little pancake PB&J (I used peach jelly this time). My boys love these little sandwiches. I also packed a few pretzel nuggets, a mandarin orange, blueberries, one heart shaped strawberry, one homemade dark red velvet cookie (recipe still forthcoming #imbusy), and two little conversation hearts, about which I know my buddy will flip. I also used a little “Bee Mine” bee ring and a heart pick as decoration.

Here is my Smalls lunch:

I also packed three little pancake sandwiches, a mandarin orange, a few pretzel nuggets, one dark red velvet cookie, and one conversation heart. Per his request, I also added vanilla yogurt (with a few sprinkles), and applesauce. He does not get decorations yet because he eats them. #iknowthisfromexperience

The Sunshine State (Lunches)

When you think of Florida, what comes to mind? Songs, like “Way down upon the Suwanee River”, “Welcome to Miami”, or “Margaritaville”? Do you think of all the dumb criminals that keep surfacing on almost every news station country-wide? Or about our balmy beaches? We have ALL of those things. And tomorrow, my Bigs gets to learn about them, in his study of our great state. Well, maybe not the criminals. We’ll save that for a rainy day. Excitingly enough, I get to be Co-op Parent in his class.

Here is my lunch for tomorrow:

I packed blueberries, strawberries, a clementine, a hard boiled egg (on which I used my egg shaping kit to make it look like a bunny…because bunny eggs), S&P for the egg, snap peas, assorted raisins, Trader Joe’s mini peanut butter cups, and a few  TJ’s “Inner Beans” (which sounds horrific, but they are awesome).

For my Bigs:

I confidently decided that I could not free-hand cut the shape of Florida on bread and went with a tropical fish PB&J instead. I drew details with my Food Writers. I also packed pumpernickel pretzel sticks, strawberries, blueberries, assorted raisins, a clementine (you can’t pack a FL themed lunch without citrus), TJ’s yogurt star cookies, and an organic yogurt squeezy thing. I added a surfboard, a few flamingo (my spirit animal) picks, and a palm tree for decoration.

And for my little Smalls:

Going based on lunches alone, you might think I love my oldest son more than my youngest. Smalls’ lunches always look a little crappy. The truth is, this kid is so wishy-washy with food, I can’t even keep up. Tomorrow’s sad looking lunch consists of half a PB&J (which he tells me he only likes when he’s at school and won’t eat at home right now), a few carrots, pumpernickel pretzel sticks, assorted raisins, yogurt star cookies, and an organic yogurt squeezy thing. I also packed him a banana for snack.

If you need me, I’ll be looking for my large shaker of salt.

Heavenly Host(ess) with the Mostess VPK School Lunch

9An angel of the Lord appeared to them, and the glory of the Lord shone around them, and they were terrified. 10But the angel said to them, “Do not be afraid. I bring you good news that will cause great joy for all the people. 11Today in the town of David a Savior has been born to you; he is the Messiah, the Lord. 12This will be a sign to you: You will find a baby wrapped in cloths and lying in a manger.”

13Suddenly a great company of the heavenly host appeared with the angel, praising God and saying, 14“Glory to God in the highest heaven, and on earth peace to those on whom his favor rests.”

15When the angels had left them and gone into heaven, the shepherds said to one another, “Let’s go to Bethlehem and see this thing that has happened, which the Lord has told us about.”

16So they hurried off and found Mary and Joseph, and the baby, who was lying in the manger. 17When they had seen him, they spread the word concerning what had been told them about this child, 18and all who heard it were amazed at what the shepherds said to them. 19But Mary treasured up all these things and pondered them in her heart. 20The shepherds returned, glorifying and praising God for all the things they had heard and seen, which were just as they had been told.

In continued celebration of our Savior’s birth story, I came up with this angel themed lunch for my Bigs. I used my angel cookie cutter on a PB&J, and added yellow details (halo, wings, dress) with my Food Writer and sprayed this most important angel gold. I packed goldfish crackers, raisins, red, white, and green chocolate covered sunflower seeds, apple slices, half a mandarin orange, some red grapes, and an organic yogurt squeezy.

This is my last Christmas themed school lunch for this year. I’ll be doing fun “home” lunches from here on out!

Candy & Gingerbread & Sprinkles, oh my!

Sounds like the stuff my dreams are made of!

I’m not even remotely kidding.

This has been such a sweet week – literally! I made some candy yesterday and baked a cake today, all of which I’ll be sharing with you. And I’ve made some really sweet lunches for my Bigs.

In appreciation of my sons’ school’s staff (most of whom have become lovely friends to me), I made candy. Crack Candy, to be specific. Have you tried this stuff?! It’s SO good, that it’s addictive, like, you know, crack. Eeeek. It could also refer to the ingredients, which include crackers. That seems like a safer name. Anyways, I Christmas-ized this Crack Candy.

I mean, really. Crunchy, crispy, salty crackers, enrobed in a homemade caramel sauce, baked until it’s soaked all the way through, and then covered in bittersweet chocolate. I can’t even. I mean, I can. But I resisted. Not that I wanted to. But I did. These are SO easy to make and they make such an impact. At least I hope they do. I doubled the recipe and added Christmas colored sprinkles.

Christmas Crack CandyCooking spray
35 to 40 saltine crackers, or however many cover the bottom of your sheet pan evenly
1 C butter (2 sticks)
1 cup brown sugar
About 2 C bittersweet chocolate chips

1 t vanilla, optional
Sprinkles, optional (for me, it’s not optional!)
Preheat the oven to 350F.
Line 1 large sheet pans with aluminum foil and liberally spray with nonstick spray. Place the Saltines in a single layer on the pan. In a medium saucepan, melt the butter and brown sugar together and bring to a boil. Reduce and simmer for about 4 minutes, stirring frequently. Remove from the heat. This is when you would add your vanilla.
Pour over your Saltines and place the pan(s) in the oven for 3-5 minutes. The caramel will be bubbling. Remove from the oven and pour on your chocolate chips. I placed it back into the oven for a few minutes to fully melt the chips, but you can just wait. Use a knife (or an offset spatula) to spread the chocolate. Add sprinkles, if desired.
Let the chocolate set up. You can place these pans in the freezer or fridge to expedite the process. Once fully cooled, break up the pieces. Store in an airtight container.

I also made a sweet little lunch for my Bigs – gingerbread themed! Sadly, I didn’t have any actual gingerbread for him to eat. A true crime!

Despite this little gingerbread man’s HUGE face, I think he turned out alright. Bigs won’t notice his wonkiness. It is peanut butter and Jif chocolate s’mores peanut butter (that’s how my family rolls – peanut butter on peanut butter sandwiches!) and I used my gold food-safe spray and Food Writers to add details. I did the same to make two little Christmas trees. I also packed pretzels, raisins, dried dates, apple slices, mandarin orange slices, and yogurt for dessert. I added a teeny bit of the homemade chocolate frosting (recipe upcoming), from the cake I made today, to the yogurt for some lovely cocoa flavor and added some gingerbread and holly berry sprinkles.

I put my hand up on your [carrot] chip…

…WHEN I DIP YOU DIP WE DIP!!!

I packed a dippy lunch for my Bigs, can you tell? Or did you just think I was just singing you songs from the 90’s? Because that IS a possibility.

I missed my weekly grocery shopping trip, so unfortunately, super festive sandwiches are hard to come by (when you are out of bread, amirite?). So Bigs got Da Dip.

I packed carrots and ranch dressing, pretzels, melba toasts and peanut butter, raisins, dried cranberries, a mandarin orange, a squeezy yogurt, and a mini butterfinger.

Word to ya mutha.

And on that farm, he had a… pig [lunch]!

My Bigs is closing out his farm-themed two weeks with a bang. I’ve packed him a pig lunch! Then they’ll begin Thanksgiving and then Christmas (already!!). Time if flying by!

I made a peanut butter and raspberry jam sandwich. I used a piggy cookie cutter, food safe spray, and Food Writers to make piggy details (pink color [from red spray], eyes, nose, tail, and gold spray on the crusts to look like hay). I packed a granola mix from Trader Joe’s (Greek yogurt chips, almonds, granola balls, dried cranberries), seasoned corn (pigs eat corn, you know), and an organic yogurt squeeze.

Oink.

Spooky Teeth Lunch

For Bigs’ lunch today, I packed [yes, another] Mummy Hot Dog, seasoned corn, popcorn, cantaloupe and pineapple, an organic yogurt squeezy thing, and some spooky teeth for dessert. These were so easy and will (I hope) make a cute impression. I cut apples to look like lips (they will need some kind of citrus juice on them so they don’t brown), spread peanut butter, and place marshmallow “teeth” on them. Easy peasy. These would be a cute Halloween snack, too!

For my Smalls, I packed a PB&J, pretzels, dried fruit, and a banana.

The boys are ready for Halloween tomorrow and cannot wait to go trick or treating.
